- 1 cup quinoa
- 1 cup pistachios, shelled
- 1 bunch basil leaves chopped
- 1 lemon
- Mix 1 cup quinoa with 2 cups water in a pot.
- Bring to a boil.
- Cover and simmer 15 minutes.
- Remove from heat and let stand 5 minutes.
- Fluff with fork.
- Add pistachios, basil and lemon juice and mix well.
- Season lightly with salt and pepper.
